250 ml glass, ice to the top

30 ml syrup + chilled soda

Fill the glass with ice cubesto the top
Pour the syrup straight over the ice30 ml
Top with chilled soda, poured down the side so it keeps its gas150 ml
One slow lift-stir from the bottom — never whisk, it goes flatonce
Garnish and serve cold

Garnish: poured hard for a thick head

Malt Party Punch

250 ml glass, packed with crushed ice

30 ml syrup + chilled soda

Drop the mint into the empty glass and press it three times — stop early or it turns bitter8–10 leaves
Squeeze the fresh lime in and stir it with the syrup for ten seconds15 ml lime
Pour the syrup30 ml
Pack the glass with crushed ice, right to the rimto the rim
Top with chilled soda and lift once from the bottom135 ml
Clap a mint sprig once between your palms and lay it on top1 sprig

Malt Cream Float

250 ml glass, ice to the top

30 ml syrup + chilled soda, cream

Fill the glass with iceto the top
